Roasted Asparagus

Really simple. And it’s my favorite way to eat asparagus because it concentrates the flavor.

  • Asparagus
  • Olive oil or coconut oil
  • Whole unrefined salt

Instructions:

  1. Preheat your oven to 400 degrees F.
  2. Drizzle a small amount of oil over the asparagus spears and roll them back and forth to coat each spear with oil. It should be a very light coat, not dripping.
  3. Roast for about 10 minutes, or less if you want them al dente (a bit crunchy).
  4. Sprinkle with salt and serve.

These are wonderful hot out of the oven, at room temperature, or cold. You can also add any kind of dressing or sauce. This is a basic cooking method.
